The Easiest Vegan Chickpea Salad

This chickpea salad is made super fast and is packed full of flavors and healthy ingredients! The dressing is tangy and slightly spicy and makes the whole salad pop!

A while ago when shopping at the supermarket together, my sister pointed out a jarred chickpea salad that she loves. I haven’t eaten it yet but it looked and sounded really yummy! Very cool for when you’re on the go and have zero time to prepare. So I had the idea to create a – probably healthier – version of this salad at home with fresh ingredients which still doesn’t take a long time to make.

And I promise I have a good one for you!! I seriously didn’t think I would eat this whole bowl but yeah I did. I kept coming back to it thinking just one more spoonful but in the end the whole bowl was gone. It’s addictingly delicious and the mixture of textures is absolutely fabulous! Theoretically it’s meant for two people though, especially when eaten with some bread or corn chips on the side.

The thing that holds it all together, however, and makes it so extra delicious is the dressing! It’s a mixture of olive oil, lemon juice, harissa powder, garam masala and salt. Oh yes, I used harissa powder in another recipe!! It might just be my absolutely favorite spice mixture of all times. Team Harissa!!

Next to chickpeas, the salad contains fresh red bell peppers, red onions, black olives and fresh coriander. The chickpeas bring a natural creaminess to it, the onions and bell peppers a crunchy texture and the olives some saltiness. Plus the fresh coriander has an additional freshness. It’s literally the perfect combination for me, texture and flavor wise. I could eat this several times a week and probably will!

I could imagine this being really good eaten with corn chips or pita breads as well. Or even in a wrap! How would you eat this?

Chickpea Salad



  1. Drain the can of chickpeas and add the chickpeas to a bowl. 

    Peel the half red onion and dice finely. Add to the bowl as well. 

    Seed and chop the red pepper and also add to the bowl. 

  2. For the dressing, mix together harissa powder, garam masala, salt, lemon juice and olive oil. Mix well, then pour over the salad ingredients. 

  3. Chop the fresh coriander and slice the black olives. 

    Add both to the salad bowl and mix together. Either serve immediately or let the flavors marinate for an hour. Enjoy!
