Gluten-free Seed Crackers

These delicious vegan gluten free seed crackers will be a big hit at your next party! They’re super more-ish and healthy too!

Years and years ago – it might have been on my second trip to South Africa – I came across seed crackers from Woolworth. It was before I was even trying to eat low carb food on occasion and I had no idea about seed crackers. A friend brought them to a beach picnic and I was instantly hooked! They were so delicious that I could have eaten the whole package!

Over the years I thought about them every now and then and once bought them again in South Africa but to be honest, I always found them quite pricey. So recently I wondered how about making them yourself… I briefly looked at a few recipes on Pinterest and found out that the secret is to soak the seeds (and nuts if you’re using any) for quite a while.

The first time I soaked them, it was only for half an hour and then I started soaking them for longer. An hour worked well for me. The soaking of the seeds, especially the chia and linseeds results in a gel-like texture. If you’ve ever made chia pudding, then you know what I’m talking about. The reason for the gellling is that the outer shell is hydrophilic and has the ability to absorb over 10x their weight in liquid.

Apart from the chia seeds and linseeds which are important for gelling, you can use whatever seeds and nuts you like. For my seed crackers, I used sesame seeds, pumpkin seeds and sunflower seeds. I love all of those seeds for snacking and adding to salads or toppings so it seemed like a natural choice. I would love hear your experience if you used other nuts and seeds!

As far as flavor goes, I went with a Mediterranean approach. Rosemary, both in ground and dried form, salt and garlic granules as well as a little bit of smoked ground chipotle were added to the seeds. They’re so flavorful and have just a teeny tiny bit of heat afterwards. If you like them spicy, add more smoked ground chipotle!

  1. Add all the ingredients to a bowl and mix together well. Let sit for one hour. The mixture will still be a bit wet but also gel-like.

  2. Pre-heat oven to 180°C (356°F). Cover a baking tray with parchment paper. 

  3. Spread the mixture all over the baking tray. It will cover it all and should be quite thin (otherwise it won't dry out) but not so thin that there are empty spaces on the tray. 

  4. Bake at 180°C (356°F) for 50 to 60 minutes. About half way through, make cuts into the cracker "batter" so that it's easier to cut them into pieces when they're crispy and done. 

  5. Take out of the oven and let cool off. Cut into pieces and store in a container. Enjoy!

Note

This recipe makes one baking tray of crackers. I cut mine into about 30 pieces.
