Vegan Chocolate & Nut Clusters

These crunchy clusters are so yummy and delectable that you’ll want to eat more than one! Packed with nuts, they’re vegan and refined sugar free.

Do you know those nut bars that are often next to the supermarket counter? There’s KIND bars and a few others and they always look fabulous but are pretty pricey for such a small bar? I may have bought them a few times but I still always feel that they’re overpriced (yet tasty). These clusters here are better!

I generally love nuts of all kinds! My favorites are walnuts and hazelnuts but I also really love all products made from and with nuts. Nut milks and nut butters are high on my list of favorites! So as a big nut lover, I wanted to create a nut snack that was delicious and gives you some power for the rest of the day. The nice thing about these is the size – you can decide if you want just one piece or a few depending on your needs and desires. And trust me, it’s hard not eating the whole batch in one go because these sure are delicious!

The nut mixture consists of walnuts (of course!), peanuts, pistacchios, almonds and sesame seeds. And then I also added some cut-up dried apricots because I really love apricots. But the nice thing about creating a nut cluster snack like this is that you can substiute the nuts and / or dried fruit. Or just omit the dried fruit if you don’t like it. Don’t love almonds? Use hazelnuts instead! Can’t do pistacchios? Use more peanuts. You see, the possibilities are endless!

For fun (and flavor), I decided to dip the bottom of these into melted white chocolate. And then I drizzled melted dark chocolate over the top. You want to use properly dark chocolate here to offset the sweetness – it will be too sweet otherwise. I used 85% dark chocolate and it was perfect. But I love dark chocolate anways, the darker the better!

These little crunchy sweet snacks are so yummy, I really found it hard to just eat one or two! But it’s a really nice thing to keep in your fridge if you need a little pick me up and you don’t wanna eat a full-on chocolate bar but something a little more healthy that is full of at least better ingredients.

  1. Soak dried apricots in hot water for 25 minutes. Then remove from the water and cut into very small cubes.

  2. Pre-heat oven to 150°C (302°F). Line a baking form (enter size) with parchment paper or oil well. 

  3. Chop walnuts, pistacchios and peanuts. Add to a bowl together with the dried soaked apricots, whole almonds, sesame seeds, maple syrup, ground cinnamon and salt. Mix very well! 

  4. Press very firmly into the baking form! Bake for 30 minutes at 150°C (302°F). Let cool off completely for an hour, then break into clusters. 

  5. Melt vegan white chocolate together with 1 tsp coconut oil. Mix well. Dip the bottom of every cluster into the white chocolate. Put in the fridge for 15 minutes. 

  6. Melt dark chocolate and drizzle that on top of the clusters. Put back in the fridge for 15 more minutes. Enjoy!
