The Best Honey Apple Cake

This cake tastes a bit like a Jewish Challah bread in cake form! Spiked with apple pieces and lightly sweetened with honey, it’s the perfect afternoon treat that will have you come back for seconds and thirds!

When I made this cake for the first time, it was for a bear. My son’s favorite teddy bear! He had decided that this particular bear will have it’s birthday on the next day and will be very sad if we don’t celebrate it with a cake! I’m pretty much always up for a birthday party so we just had to decide on a cake. Since bears like honey, we decided to do a honey cake. And then last minute I added some apples.

The cake was delicious! But I had made a very small cake (after all, we hadn’t invited any guests). So when the cake was a big hit, I wanted to create a bigger version. And after a few attempts (very happy people here ate the leftovers), this is the result: Honey Apple Cake!

I don’t know if you’re familiar with the Jewish Challah bread. It contains, among other ingredients, several eggs and honey. Tastewise, this cake reminds me a lot of Challah bread! It’s got a beautiful texture and isn’t overly sweet but sweet enough. And the apples work wonderfully with the honey in the batter.

The cake is packed full of juicy soft apple pieces! Other than apples and honey, it contains butter, spelt flour, eggs, salt and baking powder. The batter comes together very fast! And you can make it very spontaneously because I’m sure most of you have those ingredients in the pantry and fridge all the time. We definitely do! You can of course use regular All-purpose flour as well but I like using spelt flour for a healthier cake.

I have made this cake a few times now and it always disappears within one afternoon. It’s so good that you will come back for seconds or even thirds. To be fair, this makes a small cake. I used a 7 inch cake form which makes a nice amount for three hungry cake lovers. Maybe four. You can probably double the recipe and make a bigger one but I haven’t tried that yet. Instructions

  1. Pre-heat oven to 180°C (356°F). Cover a round cake form (18 cm / 7 inches) with parchment paper at the bottom and butter the sides lightly. 

  2. Cream butter and honey together for one minute. Add one egg, mix in, then add the other one and mix in. 

  3. In a separate bowl, mix together spelt flour, baking powder and salt. 

  4. Add dry ingredients to wet ingredients and mix until just combined. 

  5. Peel and core the apples. Cut into small pieces. Add the apples to the batter. 

  6. Pour the dough into the cake form. Bake at 180°C (356°F) for 40 minutes or until a toothpick inserted comes out clean and the apples are soft. Let cool off in the form for 5 to 10 minutes and then another 10 to 15 minutes on a cooling rack. Enjoy!
