Vegan Banana & Poppy Seed Oatmeal

This oatmeal is such a wonderful creamy breakfast combination! It’s delicious, refined sugar free, vegan and quick to make. The perfect weekday no-fuss breakfast!

Another week, another oatmeal recipe? No but seriously, it’s been a few weeks since my last one and I just had to share this particularly tasty combination with you! Hello new favorite breakfast!

Don’t you just love oatmeal for breakfast? It’s the perfect mixture of creamy, warm and comfort. Like a hug in a bowl! There’s no better way to start the day than this for me. Except maybe one of my other porridge recipes!

A few years ago (before all the cool food fairs had to stop because of Covid) I bought a really tasty granola on a food fair for new (and existing interesting) products. The flavor was orange and poppy seeds and it was really yummy! But to be honest, I am not hugely into orange. My husband LOVES oranges but to me they’re kind of meh. I do, however, love poppy seeds a lot and was looking for an interesting new porridge combination. So here it is, banana and poppy seed. They work wonderfully together!

Since we all tend to have little time in the morning, I love how fast oatmeal comes together. And this one is no exception. Mix your oats with boiled water and let it sit for five minutes. In the meantime, mash half of your banana. After those five minutes have passed, mix it into the soaked oats together with almond milk, poppy seeds and maple syrup. Simmer it for 5 more minutes and top it with the other half the banana and more maple syrup. Done! I really love this for breakfast!

  1. Mix your quick cooking oats with 1 cup of boiling water and the pinch of salt. Set aside for 5 minutes. 

  2. Mash half the banana. 

    When the 5 minutes have passed, add almond milk, poppy seeds, mashed banana and maple syrup to the oats and cook for 5 minutes on medium heat until creamy. Stir every now and then to make sure they don't stick to the bottom of the pot. 

  3. Cut the other half of the banana into slices.

    Pour the oatmeal into a bowl and top with the other half of the banana and more maple syrup. Enjoy!
